Come on Chris, your from Texas you should know some Spanish ... Pescado rojo ("fish red" or redfish...) con (with) salsa but I believe Redfish in Spanish is actually gallineta nórdica I'm bad on vocabulary someone that is more fluent can chime in

Seafood pho or "cahn" is good stuff ... my favorite is with any firm fish like redfish or catfish or grouper. The kind I liked had fresh tomatoes, pineapple, jalapeno, spinach, and a small shot of tamarind, fish sauce, and green onion. This is basically a boil pot where you get the fish cooked in some kind of stock nearly done, still very firm, and then add the veggies at the end. Lots of fun, and you can doctor up your bowl with more hot peppers, lemon, and whatever.
