    1 gallun zipper locks with oysters spread their own depth and especially in their own sweet juices!! No extra water or lemon juice allowed. No air either.Lay on cookie sheet 1 bag thick and freeze solid. Gotta use pretty quickly though.

    Cannot beat fresh snot fish!!

    thanks ! I do that with water in a ziplock bag when freezing fish , squeeze out water when closing so there is no air in the bag . I hear the vacuum seal works best . Wow , i'm really happy to learn this about freezing oysters and their quality after doing so .

    These maps have changed over the years. I was shocked when I saw that Christmas Bay was closed to oysters. It has been several years since I looked at them. Christmas had the cleanest water of ALL bays on the Texas coast for decades. My Dad and I use to harvest oysters there all the time.

    Plugger if you add 1 tablespoon of non iodized salt to each quart before freezing they thaw out so that you cant even tell the difference.

    If your going to go harvest oysters you need to check out both of these links for legal and health issues.
    The Maps will also contain (More specific rules). They are updated frequently.

    Milkjug , i never heard of freezing oysters . How are they after thawing ? Probably not so good to eat raw but ok for cooking ? The consistancy the same ?

    That sounds fun and have thought about it but i have been afraid of getting hepatitis or the malay waste away or creeping crude , or something . I once saw a guy banging away at exposed oysters in bastrop and talked to a guy who was gathering oysters along the banks of the diversionary canal . He said he had been doing it for years .

    Do any of you go out and pick up your own oysters?
    The wife and I do this quite a bit. I look for the low tide when the front blows it out (like right now) and hit it up with a few milk crates, a hammer and chisel and get a bunch. Eat a lot fresh and freeze the rest. Enjoy them baked, in soup/gumbo, and fried year-round. There are plenty of good reefs in upper W. Bay. I just walk in but if you wanted to take a boat you would have even more options.

    Picked up a half gallon of East Bay oysters, some jumbo shrimp for the grill, and a couple pints of shrimp coleslaw. Yum!!

    There isn't a restaurant any longer. You can still get the gumbo and slaw in the seafood market though.
