Mike,
i have been on a 30-40 man person party boat out of Destin. Took two 12yr olds with me. We all had a great time. Caught a bunch of snappers (beeliners?). I think the cost was around $40/$50. My son had a big one on (mate said grouper), but he came off.
If you are interested I'll try to hunt down the name.

I was born and grew up fishing in that area. If you are looking for Tarpon and Snook , you need to head further south. Tarpon are stricly migratory in that area, and rarely come into the bay or flats. It is very simuilar to our tarpn fishery here. Snook are about as existent in Destin as they are in Galveston.
That being said, end of April is prime time for Cobia off the beach. It is pure sight casting and it is a blast. You will need to book a charter still.
