    Got me a new toy a couple weeks ago. I've been looking for awhile for one and finally settled with a outfit out of Alabama. It was a hell of a drive but I got it back and it cooks great. Gonna start doing some comps' and maybe a little backyard catering.

    That's what I call a smoker!! Looks great, start churning out those brisket for the cook off bro. I used to do competition cooking for the Red Hot Chili Peppers cooking team years ago. My buddy has been on me about getting a team started of our own but just don't have the time. Maybe when I retire, lol.

        We did a rough count and I think we can put 12 to 14 briskets just on the bottom rack of one smoker, each smoking chamber has 2 racks plus the rib boxes. It would take a small fortune to fill it up but it cooks really good and it doesn't require a whole lot of wood to get it going. I've been very happy with it so far. It has been a long time since I've cooked a reverse flow but its all coming back to me.

          That is huge! What wood do you use/prefer when smoking meats?

                        It's missing the jet engine. That will cook the briskest faster. That's one fancy cooker. Very nice. Congrats on the pit. Lord Bless.

                          Oh , I thought you started puffing Camels or something more illegal . That's a relief . Anyway , that monster looks like the sinter used at the G.E. Plant for hardening carbide compact drill bits I worked at one summer . That or something in a crematorium . It's a brute . I ' ll volunteer as a taste tester as you learn the nuances of smoking with that brute .

                            Thanks everyone, I am pretty excited about it. Looks like our first LSBS cook off is March in Center, Tx. We are shooting for all 3 categories, gonna be a learning experience to see how comps work. I know our Q should be worthy, let's just hope the judges think so.
