  • West Bay 12-27

    Hit Confederate Reef at first light this morning. Water was clear and the wind wasn't too bad. Caught a 17" speck on plum/chartreuse. Stopped by Starvation Cove on the way back to JB and caught a 15" flounder. Just needed a red!

            Thanks for the report ! I was checking the wind this morning .... About 13 mph from the SE .... doable .

                    Made a crabmeat stuffing and put it to good use. Fresh flounder cooked on a Himalayan salt block. The salt block was a Christmas gift...I don't really think it added much to the whole deal but it looked cool.

                        Looks great ! Yeah , I got an east Texas salt lick block and it made every thing taste gamey . I thick it had been used .

                              Lump crab meat, white onion, red bell pepper, jalapeƱos, Italian bread crumbs, heavy cream, seasoning, butter (every good recipe starts with butter).

                              Dice the onion, bell pepper and japs... cook them down in a skillet until they are good and reduced. Add seasoning along the way. Add crab meat, then bread crumbs and cream until desired constancy. Fold the stuffing to mix it... don't stir or blend... that way the crab meat stays whole.

                              We made crab cakes out of the left over stuffing...mmmmm.

                              Stuff the flounder, bake to desired done. Enjoy!
