    Ok Y'all, Let's talk salsa. I heard it's the #1 condiment in America now. Ketchup sucked anyway. I know a few of you gourmets out there make your own. The 2 best I've ever had were Ibtsoom's and Primer's homemade salsa.

    But let's just talk about your favorite jarred salsa. Do you pick up the Pace? Are you Hell on the Red? Do you twist off Mrs. Renfro? Ok, enough of that.

    There are so many on the shelf, I don't know what to try next. Pace was the first we ever heard of in Louisiana back in the 80's, and I like it ok, but there are so many others of higher quality. I've been a jar a week Clint's Medium consumer for several years. I just tried Hell on the Red for the first time and it's awesome. I do not care for over the top hot. If I want to drool all over the place, I'll take a shot of liquid crab boil. I want flavor with a little heat. Discuss.

    We use Herdez or La Costena. Neither are very hot, but both are tasty. I also really like Valentina on my eggs.

      I find Herdez too salty, but it has a lot of good chunks in it. It looks better than anything out there when you see the jar. What's Valentina?

                I never buy the jars because I'm always disappointed. Even if you don't have most of the fresh ingredients it's easy to whip up a good batch of salsa using canned tomatoes, cilantro, lime, jalapenos or serranos, garlic, onions and salt.

                I had so many tomatoes from the garden last spring I cooked up and jarred probably 10 or 12 quarts of salsa. I'll have to bring you some. Not as good as fresh but not bad.

                      My favorite was always the stuff they served at the El Sombrero cafe in Hitchcock. I've eaten there for over thirty years and asked the owner for the recipe but sadly, have forgotten it.

                        Valentina isn't a dipping salsa, but it's dynamite on eggs. I discovered it at El Mercadito.

                              Yep , Clint's is my favorite too , but I haven't tried all mentioned . In general I'm not crazy about jarred salsa . Mostly , I cook hamburger meat and dump a jar of Clint's in it and eat it like that . You can have tortilla chips , melted cheese , cilantro , sliced avocado with it if available .
