Nancy picked up a couple of conch from the front yard this afternoon. I'm thinking one will be conch parmigiana, and the other will be conch and dumplings.



Using the chipping hammer on the sweet spot.


Cut the conch mantle from the shell.


Out comes the conch




The "sugar stick". Makes you "strong like bull".

Conch has a very mild flavor - slightly sweet - not fishy at all - good stuff.
