Does anyone here know how to caculate what the draft might be??
I'm not qualified to calculate that but since I've dropped out of college twice I think I can caculate it roughly as it's a flat bottom. A gallon of water weighs about 8.35 lbs. Let's say the bottom of your boat is 20' x 8' for an area of 160 sq ft. So using your guess of 2700lbs, and adding another 220lbs since I'm coming along your boat needs to displace 350 gallons of water to float. A gallon of water has a volume of 231 cubic inches, so you need to make a hole in the water about 46.79 cubic feet in the water to float in. With the area of your boat we decided on your draft would be about .292 feet or about 3.5 inches. Of course this is oversimplified and with the upslope of your boats nose you can be sure it's on the shallow side of accurate. I could come measure your boat and get you a better guess. Of course you likely remember how far off I was when I attempted to calculate the lifting power of an innertube so I probably wouldn't listen to me anyway.
When I grow up I want to be, One of the harvesters of the sea. I think before my days are done, I want to be a fisherman.

Too funny! I'm just hoping for a 6" draft, or less.

It's coming together nicely. We added a fixed t-top. If anyone knows where to get hinges for 1 1/4" tubing so we can fold it down if we need to, please let me know.

We're gonna paint it flat black. The seats, hatches, and outboard motor will be white. At least that's the plan right now...
