    So there I was at the camp this past weekend. Everyone had left and I was cleaning up. I remembered that Ibtsoom said he left me a red snapper fillet in the ice chest. So I reached in there and almost couldn't lift it. It was huge! Now normally I'd do this sort of thing on the halfshell, but I had just cleaned and stored the Old Smokey.

    I'm often faced with "sitiations" like this on Sundays. Lots of left-over stuff and no idea what to do with it. I always dream up something and it seems to always come out great. I remembered something my grandmother used to make called redfish courtbuillon (KooBee-Yaw). I've never read a recipe for it, so I made it up using what I had. I sauteed some celery, onions, garlic, and bok choy, then mixed it into the remnants of the butterbean melange we had put a good hurt on. I dumped in a fair amount of strained crawfish stock I had been working up since Friday night, plus a large bunch of chopped cilantro. Added celery and coriander seed, let the flavors mix up over medium heat while I cubed up the beautiful snapper. I cut the heat and threw the fish in, letting it poach in the awesomeness of what I had created.

    HoooWeeee! Talk about GOOD! I ate it for supper on Sunday, lunch and supper on Monday, lunch on Tuesday, lunch and supper today. I'm sorry it's gone. Yeah, I could have put it in the freezer, but it was so good! Best of all, it was totally healthy.

    Thanks for the fillet Mike! I wonder what I'll have for leftovers this coming weekend.

        3 cans diced tomatoes, 1 medium yellow onion, 1 yellow bell pepper, 1 red bell pepper, 1 bunch celery, 1lb smoked sausage. I was a broke long term substitute teacher going to HBU working on my Masters Degree. When I got paid, I tried to keep sausage or shrimp on hand. Got to my apt one evening and felt like cooking. Tired of ramen, tuna, pnut butter/jelly, and grilled cheese. Got veggies cheap and tomatoes were .79 each. Did not have much else to cook anyway. Diced veggies and began sauteing them, diced sausage and added them to pot. Once onions began to lightly brown on edges I added tomatoes. Came up to sizzle, turned fire down to low, topped pot and let simmer about 45 minutes. Spooned over rice and poor college boy did not feel so po no mo! My aunt from New Orleans told me they cooked "smothered tomatoes" quite often. Who knew? One of my favorite dishes now and relatively healthy with Turkey sausage now.

              My fav and go to after a long night of drinking is nachos. Put chips on baking sheet, put rice on chips, then whatever meat I can find, sprinkle with cheese, pickled japs, drizzle some heb that green sauce over it, put in oven on really high for a few mins.. Easy and good.. Just don't forget to turn the oven off and almost burn the house down.

                  Late at night fry two to three eggs and add Wolf brand chili to it. Don't laugh until you try it!

                    Making courtboullion out of red snapper should be a crime. I'll bet you grind prime rib into chili meat too.

                      Old Salt, I appreciate the effort, but eggs are the DEVIL! I'm sure someone will like it though.

                      Milkjug, I agree on the slight misuse, but it sure was GOOD!

                      VJER Fest was a success. Only hiccup was I made the boil too spicy last night. I think I've got to start measuring stuff. Last weekend too weak, this weekend too strong. Next time I hope I get it juuuust right.

                        If you are to use water for any recipe , use chicken broth instead . Well , seafood broth for gumbo and such . But , like rice , chicken broth instead of water adds so much more flavor . Beef or vegetable broth where appropriate .
