It depends on what you plan to shoot. They make the AR platform in .308 for larger targets, .223 for smaller targets. A navy seal will tell you, "never shoot a large caliber man with a small caliber bullet" same goes for game. For small south Texas deer, .223 is good but still a bit light in the knock down power category, you'll spend time tracking it. Also, .308 is easier to find ammo, when times get scarce, .223 is hard to find.

When you have made a decision , BUD'S GUN SHOP on line has good prices and selection .

Absolutely. I've paid an average of 1$ a round for a while now and that's for cheaper .308 ammo however my point of view on this is on level with lightweight 8's response.
Not that you would necessarily have to go Rambo on a deer with a .223 (although I know guys who have) but shot placement needs to be exact as the .223 is light and a very hot round it tends to poke little holes and doesn't cause much hydrostatic shock .
That being said you'll likely wind up paying just as much if not more for appropriate hunting ammo in 223 for what many consider to be a far less capable round than the .308
Its also important to consider how much plinking and target shooting you'll want to do...

Now on gun make my personal favorite is the the lwrc piston driven reaperor the FN SCAR heavy.
Those are both very accurate , very customizable guns with about the same dependability and toughness as an ak due to the piston drive.
On the cheaper and a little tamer side too ArmaLites a4 ( flat top ) ar-10 comes from the factory in just about any configuration you want and I have a good deal of experience with that particular model .
I don't really think you could go wrong there as far as bang for your buck goes ....
Then again I know guys with plain Jane dpms ar's who wouldn't trade them for anything so just consider the things you'll really be using the rifle for and build it around your priorities.
Sorry for the short article here but hope maybe it helped some... guess work is a little too slow for me this morning haha.

how much are you looking to spend? Do you want a cheap $600 one from academy or on real one with the option to go full auto?

My preference in Caliber is 308. Unless you are gonna lug dozens of clips around when hunting or self defense. Then go with the military rounds. You got the right and good idea in building your own also. You will know the weapon better and what spare parts will be needed.

AR10's are not nearly as interchangeable with parts and easy to "build" as the AR15's.
