      I use cheap stainless steel throw-aways although I had a custom 7" fillet knife built by a blacksmith, which was about $250. Nice while I had it because he'd sharpen it for me, just a coupla beers. That was spring steel that was hardened three times, nice ebony handle. The problem with many knives is that they're too darn sharp, and go right through skin and bone with no "feel" to them.

      Why don't I still have it? The blacksmith died and we raised funeral money for him, and somebody paid $300 for it. It's hard to find a real knife but if you do, take care of it ... and have a real knife man sharpen it from time to time to repair the edge.
