      Reds ... I release em big and small just a-like, but ... I will say, being from Houma and having a coonass mother in town, I do bring a few home to her from time to time - she does some really good things with'em. I typically won't mess with'em but, like'em grilled and ... if you lay a slab of redfish right on top of your crab boil just before you take the crabs off (let it steam for about 2 - 4 minutes depending on the size) - it's like eating jumbo lump crab meat ... !
      Props to your mother, I love cajuns. My mom was born in Washington parish in 1923. Although not a true cajun, 40minutes to the north shore she picked up some culture. My dad was from Ocean springs,Ms. and was one of the best shrimp boat captains in Freeport,Texas. still holds records for biggest shrimp and snapper hauls down there. We were not so advantaged so I grew up eating what Paw-Paw caught. Shrimp, oysters, Blue and softshell crab, fish got pretty old and I got enough pretty quick. That's why I take a cheeseburger and o-rings any time.

        Mmmmmmmmmmmmm I like my Red Carp,cut in finger strips and southern fried, just not real often! I too prefer the bottom feeding flounder over other fish.
