Live shrimp is a good bait. I've caught them on Gulp lures too.
I've never fished for them in Chocolate Bayou, but I've had good luck using small live finger mullet for singling out the bigger mangroves. During the summer, I'll cast-net some finger mullet and then cut the tail off when dropping the bait down to the bottom between pilings. Just hook the mullet through the lips on a 1/8th or 1/4 oz jighead and slowly bounce it off the bottom.
